Wine Journal: Moscato d'Asti DOCG

As implied by its name, Moscato d'Asti DOCG Baroni delle Casate is made from moscato grapes grown in the heart of the DOCG production zone, the hills of Santo Stefano Belbo. Moscato is an ancient grape variety, brought in Italy by greek, it was named after the typical scent of musk (latin: muscum) of the grape.

The grapes are hand-harvested in early September they are rushed to the winery where they are softly squeezed with manual presses. The resulting pulp and juice is then refrigerated in stainless steel tanks at low, near freezing temperatures in order to keep it from fermenting. This procedure helps insure the freshness and vitality of the wine.
