Cauliflower crocchette bites

This recipe is very simple and tasty!
Cauliflower crocchette are perfect as finger food, appetizer or sidedish. Even kids will love them!

Ingredients
1kg cauliflower
5 tablespoons of grated parmigiano reggiano
bread crumbs as needed
1 egg
nutmeg
salt and pepper to taste
1 garlic clove
1 tablespoon of minced parsley
oil

Directions
Boil the cauliflower in salted water until tender.
Drain in a colander and mash with a fork, leave it for one hour with a weight on top to make water drain easier.
Put the cauliflower in a bowl, add egg, parmigiano, finely chopped garlic, parsley, bread crumbs (enough to obtain a quite solid mixture), salt, pepper and nutmeg to taste.
Form the mixture into small balls and roll in breadcrumbs.
Fry the crocchette up to browning.
