Fregula with Cocciula - the sardinian cous cous

Fregula is a sort of Sardinian cous cous, its traditional accompaniment of saridina's cuisine are clams, locally the recipe name is fregula con cocciula.

Fregula with clams can be served as a first dishes or as main course if you add seafood and squids.

Ingredients

250 gr fregola

1kg of clams

200 gr peeled tomatoes

2 cloves of garlic

minced parsley 2 tbs

100 gr white wine

100 gr extra virgin olive oil

100 gr pane carasau

salt and black pepper at taste

Directions

Wash and scrub clams. Heat the olive oil in a large heavy pot with garlic cloves. Place the clams, in a single layer, raise the flame and add the wine, cover it tigthly. Cook over until the clams open, probably about 5 mins. In another pot heat the oil with garlic clove until golden, take off the garlic and add parsley. After few second add tomato sauce salt and pepper.
