#2 See, swirl, smell, sip and savor: sounds like a nursery rhyme

2# What do you smell? How many things a wine professional can smell in only one goblet of wine?!?

When you are going to smell the wine, stick your nose into the glass and breath in deep.

A tip to notice more smells is to close your eyes! You don't need to use odd descriptions and endless list of adjectives. Follow the chart above to semplify the olfactory examination.

Aroma intensity: the first thing to notice. It describes the impact of the parfumes in your nose. Of course aromatic and powerful intensity are clues of high quality wine.
Aroma families: Swirl time! Sniff again the wine. First look for off-aromas. If there are no obvious flaws, then think about the aroma-list: how many categories can you identify? For each category which aroma have you found? There are some aromas that are typical for certain grapevines: think about Sangiovese and the scent of violet flower, or Moscato and stone fruits.
The aromas can be divided in three types, depending on their origin:
Primary Aromas: come from the grapes, include flower, fruit
Secondary Aromas: come from fermentation and yeast
Tertiary Aromas: come from aging, oak, oxidation
The aromas tell you about how the wine will taste: it should be tuned with the flavor!
If you are sniffing a white wine with scents of dried fruit, apricot and peach jam, honey, you will not drink an acidic, young white wine; probably the wine is sweet or late harvested.
Complexity: it depends on the variety of aroma-category that you smell. The layers of smells and aromas perceived make the bouquet of the wine. Bouquet means also bunch flowers, the finest the better!
